MINTY & LEMONY ORANGE MARMALADE ICED TEA
INGREDIENTS
Water

2 cups

Tea leaves
|
2 tsp.

Mint leaves
|
5 – 6 nos

Orange marmalade
|
2 tbsp.
|
Sugar
|
2 tsp.
|
Minty Ice cubes
|
2 trays
|
Lemon
|
½ no
|
METHOD:
1.
In an ice cube tray in each compartment put a
mint leaf. Pour water and freeze to make minty ice cubes.
2.
Add the orange marmalade to the water in a separate
saucepan.
3.
Add sugar and mint leaves to it.
4.
Put the water to boil. Make sure the marmalade
dissolves in the water as it boils.
5.
Scoop out a little orange rind that remains at
the bottom of the pan after the marmalade dissolves. Keep it for garnishing.
6.
Now add in the tea leaves and again simmer for
half min.
7.
Remove and cool. Chill the mix. This makes a
little stronger tea so you can reduce the tea leaves to your preference if you
like it mild. Squeeze the lime juice into the concoction.
8.
Put the minty ice cubes in a serving glass till
almost ¾ full.
9.
Strain and pour the tea concoction over the ice
cubes.
10.
Garnish with mint leaves, a lemon slice and the orange rind
that you preserved from before. You can also add a slice of orange if you have
or you can also sprinkle some orange zest.
