CHEESY SPINACH & CORN SANDWICH
INGREDIENTS
Palak / spinach leaves

1 bunch

Sweet corn kernels pressure cooked
|
1 cup
|
Garlic cloves minced
|
4 – 5 nos
|
Onion minced
|
1 no
|
Green chilli minced
|
1 no
|
Olive oil
|
1 tbsp
|
Cheese grated
|
½ cup
|
Salt
|
T.T.
|
White pepper pdr
|
T.T.
|
Brown bread
|
10 slices
|
Butter
|
As req. approx 2 tbsp
|
METHOD:
1.
Blanch the spinach leaves in hot water. When they
get soft remove them out and run them under cold water. This prevents further
cooking and hence the leaves remain green. Squeeze out excess water and finely
mince.
2.
Heat olive oil, add in the onion and garlic. Sauté
till it is soft. Now add the green chillies and mix.
3.
Now add in the corn and spinach. Mix it up and
season it with salt and pepper.
4.
Remove into a separate bowl and add grated cheese
to it while still hot.
5.
Butter the bread slices and apply a thick layer
of this stuffing mix.
6.
Cover with another slice of bread and grill till
golden brown.
7.
Serve while hot with tomato ketchup.
