CORN CHEESE & PANEER PATTIES
INGREDIENTS
Sweet corn kernels

1 cup

Paneer / cottage cheese
|
¾ cup
|
Green Chillies
|
2 – 3 nos
|
Cheese cube
|
2 – 3 no
|
Salt
|
T.T.
|
sugar
|
¼ tsp
|
Jeera pdr / cumin pdr
|
¼ tsp
|
Lime juice
|
1 – 2 tbsp
|
Oil
|
1 tbsp + to deep fry
|
Jeera / cumin seeds
|
½ tsp
|
Bread crumbs
|
½ cup
|
Amchoor pdr / dry mango pdr
|
¼ tsp
|
Coriander leaves
|
4 - 6 sprigs
|
METHOD:
1.
Pressure cook and coarse grind the corn kernel
with green chillies.
2.
Heat 1 tbp oil, add in the jeera and the corn
kernel. Mix well and add in the salt, sugar, jeera pdr, lime juice. Cool
3.
Add in the chopped coriander leaves, Amchoor pdr
and crumbled paneer. Mash it well and add little bread crumb to bind it
together.
4.
Cut the cheese cube in 4 pieces.
5.
Divide the mixture in egg sized balls. Stuff each
cut piece of cheese into the ball. Shape it and flatten it on your palm like a
patty.
6.
Roll it in bread crumbs. Chill the patty in the
fridge for 1 – 2 hr. Deep fry in hot oil till golden brown.
