MODACHYA MATKICHI USAL / SPROUTED MOTH BEAN USAL (TYPE 1)

INGREDIENTS

Sprouted moth beans / modachi matki
1 cup
Chilli pdr / laal tikhat
1 tsp
Goda masala
½ tsp
Jaggery
1 tsp
Scraped fresh coconut
2 tbsp
Chopped coriander leaves
2 tbsp
Lemon
½  no
Salt
T.T
TADKA

Oil
1 tbsp
Mustard seeds / rai
½ tsp
Turmeric pdr / haldi
¼ tsp
Asafetida  / heeng
¼ tsp


METHOD:

1.       Clean and wash the sprouted beans. Allow to drain the excess water.

2.       Heat oil, add rai, haldi and heeng. Add the drained sprouted beans.


3.       Sauté well till all the excess moisture evaporates.

4.       Sprinkle some water on top and cover and simmer till steam starts to come out.


5.       Add chilli pdr, goda masala and half of the coconut and coriander leaves.

6.       Sprinkle some water again if required, cover and cook.

7.       Finally when the sprouts are cooked add the jaggery and salt.


8.       Squeeze a lime on top and garnish with the remaining coconut and coriander leaves.

9.       Serve with chapatti or bhakri.
