TENDER COCONUT ICECREAM

INGREDIENTS

½ no
Narial malai / tender coconut flesh chopped
1 cup
Coconut milk powder OR coconut cream
2 tbsp
Sugar
2 tsp
Milk           
2 tbsp
Fresh cream
½ cup

METHOD:

1.       Prepare the icecream base.



2.       The tender coconut flesh that you use should be soft and creamy but firm.


3.       In a bowl mix together the flesh, sugar and milk.


4.       Bring it to a boil to remove out excess moisture. Allow it to sweat a little but do not cook.

5.       Remove from flame and allow to cool. Chill it.



6.       Mix it along with the icecream base. Add in cream, coconut milk powder and churn till it all gets creamy.

7.       It will also increase in volume.

8.       Pour into a plastic container with a tight fitting lid.

9.       Cover top with a plastic sheet and put the lid.

10.   Chill freeze for 6 – 7 hours.
