OREO & CHOCOLATE CHIP ICECREAM / COOKIES AND CREAM WITH CHOCOLATE CHIP ICECREAM

Finally managed to use the chocolate chips that were made last week. And what an outcome I must say. Eating this icecream my son gave a very blissful look and has declared  " you are the bestest mommy in the whole world". Well this declaration is my best and most cherished gift so far.

OREO & CHOCOLATE CHIP ICE CREAM / COOKIES AND CREAM WITH CHOCOLATE CHIP ICECREAM

INGREDIENTS

Ice cream base http://paripoornapaksiddhi.blogspot.in/2014/05/basic-icecream-base.html	½ no
Oreo cookies roughly crumbled	10 nos
Chocolate chips Dark or milk http://paripoornapaksiddhi.blogspot.in/2014/07/home-made-chocolate-chips.html	2 tbsp
Fresh Cream	½ cup
Mint sprig	1 no

METHOD:

1.       Take the chilled and set ice cream base. Cut it in cubes. Add the cream to it.

2.       Blend it all well till it forms a smooth frothy mix and it doubles up in volume.

3.       Now add in to it the crumbled cookies and chocolate chips. (reserve a little of both for topping)

4.       Mix it up lightly with a spoon. At this point do not blend. We need the bite from the cookies and choco chips.

5.       Sprinkle the reserved cookies and chips on top.

6.       Pour into an air tight container, cover with a plastic sheet and seal off with a fitting lid. That helps in sealing off any gaps and subsequently forming ice crystals.

7.       Chill freeze for 5 – 6 hours.

8.       Remove out into scoops, garnish on top with whole oreo cookies, a few choco chips and a mint sprig.

9.       Serve chilled immediately.

10.   You can also sandwich the scoop or cut out the ice cream with a round cookie cutter and sandwich it between two cookies and make a ice cream cookie sandwich. Doesn’t that sound fun.
