PUDINA LASUN LACCHA PARATHA / MINT &
GARLIC LAYERED PARATHA
INGREDIENTS
Wheat flour

½ cup

Refined flour
|
½ cup
|
Salt
|
T.T.
|
milk
|
As required for kneading
|
Oil
|
1 tbsp
|
Mint leaves chopped
|
2 – 3 tbsp
|
Garlic finely chopped
|
2 – 3 tbsp
|
Oil / ghee
|
For smearing
|
Refined flour
|
For dusting
|
METHOD:
1.
Mix wheat flour and refined flour and add salt
to it, add milk and oil to knead into soft dough.
2.
Apply little oil on your hands and knead the oil
into the dough. Keep covered for 15 – 20 min.
3.
Divide into egg sized balls.
4.
Using a little flour roll it into a large sized
circle.
5.
Liberally apply oil all over the circle and
sprinkle flour all over the oiled side. Lightly spread the flour with your hand.
6.
Sprinkle some chopped mint leaves and some
chopped garlic liberally over it. You can reduce or increase the quantity as per individual preference.
7.
Using one finger thickness shape it like the
pleats you make for a fan. Press the pleats together and pull a little. Now coil
it around to again form a circle. Keep covered for 10 – 15 min again.
8.
Now apply some flour and roll with light hands to shape like a little
thick paratha.
9.
Put it on a hot griddle. When you start seeing
light bubbles on top, flip over. Apply oil or ghee.
10.
When the lower side touching the griddle starts
getting light brown spots turn over once again. Apply oil or ghee to the other
side as well.
11.
Cook this side too till it gets light brown
spots.
12.
Smear more ghee on top if you like and serve hot
with any Indian curry or gravy.
